I promised to share recipes with you. I’ve decided to begin, by opening up the breakfast bar menu. Yes, we are going to drink! I’m inviting you to experiment with something colourful, fresh and sweet. My beautiful Beet & Berry Smoothie.
Along with being a captivating crimson colour, beets are loaded with an antioxidant called betalain. They are an excellent source of potassium, vitamin A as well as a good source of vitamin C. Don’t neglect the leaves of this vegetable as they can also be eaten raw or cooked and are rich in another powerful antioxidant; carotenoids.
Did you know that in Roman times, beets were considered an aphrodisiac? One thing I know for sure, is that I am passionate about how delicious they taste in a smoothie.
Smoothies are a perfect choice for breakfast on-the-go or just as a snack. The best part, in my opinion, is when we mix vegetables and fruits in smoothies. It’s an explosion of flavours. Bon Appétit!
• 4 small beets
• ½ cup (125 ml) of pomegranate juice, 100% pure
• 2 bananas
• 400 g of Greek yogurt (approximately 1 1/2 cups)
• ½ cup (125 ml) of milk, 1%
• 18 blackberries
1. Peel the beets.
2. Toss all ingredients into blender. Hold cover tightly and blend until smooth.
This recipe will yield 3 cups.
